SBM reaches the firmament

No fewerthan 10 stars wereawarded to Monte-Carlo Société des Bains de Mer on March 31st during the famous Michelin Guide France 2025 ceremony.

SBM (Monte-Carlo Société des Bains de Mer) thus confirms its momentum and culinary reputation while skillfully renewing its gastronomic offerings—a remarkable feat.

L’Abysse becomes the first two-star Japanese restaurant on the Riviera, Elsa regains a star, but this time under the direction of Marcel Ravin, and Blue Bay, which already boasts two stars, earns the Passion Dessert title.

L’Abysse Monte-Carlo:Two stars in eightmonths

Opened in July 2024 within the Hôtel Hermitage Monte-Carlo, L’Abysse Monte-Carlo has become the benchmark for Japanese gastronomy, while Yoshi at the Métropole lost its star. The astonishing co-direction of Michelin-starred chef Yannick Alléno and sushi master Yasunari Okazaki works wonders, offering a culinary experience where two schools of thought meet, to the delight of diners. The Grande Bleue (Big Blue Sea) surrounding the restaurant offers fish selected in accordance with a sustainable policy. These ultra-fresh products are enhanced by the expertise of Chef Okazaki, who practices ikejime, a traditional Japanese slaughtering technique designed to preserve the quality of the fish while minimizing their suffering. This quest for the Holy Grail was rewarded, in its first year of opening, with two Michelin stars, making L’Abysse Monte-Carlo the first two-star Japanese restaurant in Monaco and the Côte d’Azur.

Elsa: A Star for BeautifulMediterranean Cuisine

Nestled in the heart of Monte-Carlo Beach, the Elsa restaurant sets its tables outdoors, facing one of the most beautiful settings overlooking the Principality. On summer evenings, lulled by the waves and the song of the cicadas, with the thousand lights of Monaco as a backdrop, a dinner at Elsa is a rare moment. Especially since the arrival of Chef Marcel Ravin and Chef Domenico D’Antonio, the menu has been enriched with refined Mediterranean cuisine highlighting exceptional products that are often local and always seasonal. Chef Ravin’s perfect mastery of flavors and textures has earned Elsa a Michelin star. Only one star? The second one must not have been far off, but it is true that Michelin judges also take into account the decoration of the dining room and not the natural setting, which in this case would earn three stars on its own. Blue Bay Marcel Ravin: The Passion Dessert 2025 Award

At the Monte-Carlo Bay Hotel & Resort, the Blue Bay Marcel Ravin, already awarded two stars, has been awarded the Passion Dessert 2025 Award. This prestigious award, initiated by the Michelin Guide in 2019 to reward sweet treats and highlight pastry chefs. It’s rare for chefs, even Michelin-starred ones, to be good pastry chefs. They were often overshadowed by these beautiful establishments. Now, they’re also taking their place on the celebrity podium. This is the case for pastry chef Floriane Grand, who has collaborated with chef Marcel Ravin for six years and has skillfully drawn inspiration from the garden and the Caribbean flavors of her distinguished chef.
